    Winemaking: Once harvested, the fruit is pressed immediately to minimize any colour pick up from the skins, from there its transferred to French Concrete Eggs for the fermentations. These concrete eggs allow higher lees contact and micro-oxygen to the wine, both of which gives the wine a richer-rounder mouthfeel while still retaining fruit freshness and varietal intensity.

  • 2023 Willamette Valley Pinot Gris

    Winemaking Both vineyards were harvested within the same week. 100% stainless steel fermentation at cool temperatures to retain fruit freshness and varietal intensity. Using an old French winemaking technique, the yeast lees were extracted from the ferment during fermentation, then aerated-oxidized before returning them to the top of the wine to naturally settle, and thou intensifying and enriching the mouth feel, offering pour flavors to a lengthy finish to this wine.
